Twelve pounds of pork belly and two racks of ribs out of the brine and almost ready for the smoker this afternoon.
Good thing Mary doesn't use Facebook or she'd see this and find out I'm using the bathroom for a walk-in cooler (shut the door, close the heat vent, and open the window to let freezing air circulate), her oven racks for drying, and her laundry sink to catch the drippings. She likes the bacon, though. New Year's day atop Sioux Mountain.
Friends spent the day at camp with Mary and me. We took the scenic route by snowmobile back to town and stopped here, at the highest place for miles around, a few minutes before sunset. Like skiers, most snowmobilers spend hundreds of bucks to look good on the trail. For years I have bundled up in a ragged, but mighty comfortable, old baggy quilted suit of coveralls. Guess which one here is Mary and which one is me. Guess who is warmer. Guess who is fatter. We all had a great day. Thanks for the picture, Tammy. |
